In Hong Kong, old fashioned ice cream is rare – usually the brands we see are made using machines that have precise recipes, using bulk flavours, or add chocolate chips, flash frozen and sent to us from another country. Our restaurant team re-visited this process, adding whole Australian Milk, quality chocolate, adding fresh fruit pieces, and making ice cream in small batches.
